same problem here.
Working in localhost with ubuntu gutsy.
Images are correctly uploaded to files/ directory and shown in the edit tab of the products.
However no thumbnail is created.

Version of installed modules:
drupal 5.6
Image 5.x-1.x-dev
Imagecache 5.x-1.x-dev
uBrowser 5.x-1.2
Token 5.x-1.x-dev
Thickbox 5.x-1.x-dev
UberCart 5.x-1.0-beta1
Workflow-ng 5.x-1.x-dev

EDIT: forgot to say that I have the ubercart_images/ directory (I didn't need to create it)
