The reason the images are not showing is because:

when people upload the modules for ubercart they are not uploading cck, imagecache and imagefield.

Also when installing the modules in drupal make sure cck, imagecache and imagefield are enabled first.

This means that when ubercart installs it will set the imagcahce presets and then your images should start to display.
