Modifing the Categories and Product Listings Pages

I too am trying to figure out how to modify the category and product listing pages. This is such a complete tutorial on the product page. But from what I can tell node-product.tpl.php will not effect the category or product listing page. If I just knew the overwrite file to create or use I would be set. Any suggestions or even guesses are highly welcome.
