Thanks for all the information provided. I've just found a bug that causes that some countries without regions selected were ignored. I just fixed it.
Try the last version from the github url -> https://github.com/joanpc/uc_global_quote/tarball/master .

A version with multiple shipping options will follow, but i don't know when. I've made this module for a client and they don't need this feature at he moment . I'll think about where to specify the estimated time it should be some kind of method/zone combination, but maybe just providing average ranges is enough
