Hey mackay. You might check out this contrib. I haven't tested it, so I'm not sure how closely it will be to what you're looking for. I have tried to make adding checkout panes a little easier w/ the "data" column in the orders table. Not sure if this module takes advantage of that or not, as my change was fairly recent.
