Unfortunately, I believe it's due to the buginess of the subscriptions module. I'm looking forward to this contender as an alternate way to provide the functionality:

It's still in Alpha, but if anyone out there is using it and can vouch for it, I'll consider replacing the subscriptions module and moving to notifications.

It's quite possible that this exactly what you asked for...
At the time you posted this issue, there were 4 replies to your forum topic (http://www.ubercart.org/forum/support/3523/notifications_default). All four replies came within 20 hours of your original post.
If you subscribed to that topic, you should expect to receive one notification for each of those replies. Plus, if you have autosubscribe set in your profile, you should receive an additional notification for each of those replies. That makes a total of eight notifications, which is what you got.
Notifications seem to be batched - they don't get sent immediately. Since all those replies were posted within a short period of time I don't see it's unusual for all eight notifications to arrive at once. I certainly haven't seen an excess of notifications sent to me.
