As I've been using UC I've been taking notes as to what works, what doesn't etc. Where's the best place to submit these? These aren't really bugs or issues but rather items that could be handled differently (not that they necessarily should).

I'd say create a thread in either the Development or Ideas and Suggestions forum with a title something to the effect of "Usability feedback", "Implementation changes", etc. You can make the call there. It may be best to split up bugs from user interface stuff from feature suggestions. That would aid in responding/addressing the issues in the code. 
And we'd loooove to have some feedback like this.
