So if I understand this correctly, classes are different types of products and each class of product can have different fields to other classes of products. But when I go to create a new product how do I set the class for that new product?

You have to set up the classes first. Go to Store administration > Products > Manage classes and fill out the form. For each class you create, there will be a new node type in "Create content", and in the CCK administration of Content types.

Right, but these then don't show up in the UC menu? Not that it's important, I guess we just use the "create content" menu.

I guess I should do something about that create product link. Making products shouldn't be confusing.
