Could product attribute options be added when creating products? It would function similar to Content Taxonomy's autocomplete http://drupal.org/project/content_taxonomy .

this is a good idea, and yes, I think you could create attributes while creating the product, but I look at this as a convenience issue and therefore not as critical as developing new features to fix issues Ubercart doesn't currently address. If someone addresses this issue, we will be happy to move the fix into core, but for now the core team has what we consider more pressing issues.
