Thanks, Morten. If you're just going to be selling to Danish shops, you can remove the zone field altogether in the address field settings at /admin/store/settings/checkout/edit/fields.

One of my desires for a future version would be more flexible fields, as many folks would prefer textfields to select boxes for zones on a per-country basis... or as in your case they'd just want to remove it altogether. If they're really not necessary, you can always just add no zones and Ubecart will display a N/A in the select box and disable it.
