Is there a way for users to place orders by phone, fax or other methods besides click through to an online payment processor.

I would like for them to review the catalog items normally, but use the phone or other direct methods for ordering and making payments.

Also, because the nature of the site I'm working has products that people always have questions that cannot be answered by a catalog page.

Maybe I just need a catalog of pictures and descriptive product page instead of a full featured e-commerce cart.

The way I have the products setup everything looks very good using the UC.

Any suggestions would be appreciated.

There is a payment option in ubercart of check which completes the order without needing to pay online and then you can mark as check received later - you could just modify the text of this to suggest phoning with payment?

This way you would have all their address details etc

Its the way I do it with my current zencart store if customers with to use an alternative payment. (And how I have my test ubercart store setup currently so I can test the rest without bothering with payments.)

I've been tweaking it. It may work with the addition of some messages to users explaining the process.

Principally, I just keep telling them to call the phone numnber. I realize, if they are filling out the form and submitting the order their phone number is available to call them. The best option is probably for them to call, and the store can review the order online and they can discuss it.
