Trying to create shipping options for the shopper,
such as "Ground", "Business", "Over Night", etc.
I've searched for some hints, but couldn't find any.
Any guidance would be greatly appreciated.

Upgrading to Beta2 should give you the ability to do exactly what you need there. Not sure how you'd go about doing it on Alpha8 though.

I was going to point you to http://demo.ubercart.org to try it out, but they don't have Flat Rate shipping enabled there. If I understand what you want, though, Beta 2 will do what you need.
You can define any amount of flat rate shipping methods and assign a base rate and a per product rate with each method.

"Shipping quotes are generated automatically when you enter your address and may be updated manually with the button below."
And the "Click to Calculate Shipping" button?
I'm only showing 4 options, so button and text looks out of place/confusing.
Also ...
How do you remove "Select a payment method from the following options."
When there is only 1 option?
