I was wondering if it were possible to set up a website where each user could set up a separate "store" to sell things with ubercart. I guess it would be something similar to ebay stores.
Has anyone done this?

No but this is the kind of thing we are planning for our site in the next few months. I'm not sure it'll be a "store" per se, but will possibly tie in with Organic Groups. I imagine you could use Organic Groups and Views to provide a View of that Group's available Products (in our case it will actually be a custom product node type)... and that will tie into Ubercart nicely, I hope 
Interesting Idea
That would be good - but some programming would need to be developed to allow shipping estimates and such between a buyer and products from a particular group....something to think about.

Ahh, true. I hadn't thought of that, since our products will be downloads. But that would be an interesting challenge - and would definitely lend itself to more of a "sub-store" feel.
User stores or multiple stores
This would be a great feature, though I'm sure extremely complicated and maybe not possible without some pretty major changes to Ubercart. Are you aware of any updates or further efforts towards this?
