Have I missed it? I'd like to have a pay-for-access portion of my site, but I don't see how I might do that with ubercart. Have I missed this, or is it not possible?

I think there are easier ways to do this through Drupal that wouldn't involve Ubercart. Check out some membership modules.
The current way to handle this would be w/ aymerick's contribution for granting a role on product purchase. You would setup a product to act as an admission fee and then grant the user the role when they buy it w/ this module. You can use the role to restrict access to certain portions of your site using various modules like Taxonomy Access Control Lite which lets only users of a certain role view content tagged w/ a certain taxonomy term.
