I think I am just missing something simple here, however:

I'm wanting to change the way images are displayed when someone views a product page. Currently when I have multiple images they will stack vertically, and I want them to display horizontally -- Is there an easy way to do this? Thank you!

Maybe it's a feature of your theme, but they should display horizontally by default. If you need to make changes, it would be in the theme level either in your CSS or in a node template file. You can browse the theming/design forum for some examples or search for "nifty products tutorial".
