Here's what I'm wanting. If you purchase Joe's ebook, the money goes to Joe's paypal account. If you purchase Sally's ebook, the money goes to Sally's paypal account.

Is that available?

I bet this could be done through hook_form_alter() if you're using PayPal WPS - I believe the Ubercart Marketplace module package in development will do something like this for you.
