Is it possible to use tokens like [order-email] as the sender of the Admin checkout notification email?

Not in UC 1.x, but I believe we can make it happen for 2.x quite easily.

Thank you! I've been wishing for the same thing.

Would it make sense for the default sender email to be
[store-email]? One less setting to worry about.

Good call.. will look into that. I can't remember if the from address has token replacement on it or not.
