Is it possible to output the credit card type (Visa, MC, AMEX, etc) on the order summary screen in orders admin? I see "Method: Credit Card" but can you also output the type here that the customer chose?
Or is that a security issue?

Actually, the card type will appear (if you've turned on that option) if you look at the payment pane under "edit".

I set up a website for a kayak race and I have been asked to to include the CC type in the emails forwarded to the office when an entrant has paid. I can not seem to find where the order summary email content is generated. I think this thread is talking about the same thing, but can't figure out what you mean when you say payment pane under edit. Is this Home » Administer » Store administration » Configuration » Payment settings? I am not seeing any option for this here. I'm looking for a way to include the CC type in the email generated by this default conditional action found here: Home » Administer » Store administration » Conditional actions.
