Changing order numbering?

When we go live with our new Ubercart site we want the order numbering to begin with a specified order #. Like I'd like to start with the last number from our old site. So it's sequential. Is this possible? Currently during testing phase I'm up to order #76, but what if I want to start with order #3000 when we go live?
