On my site I'm selling single, unique products and if the product is sold it still shows on catalog pages.

How can I order the products (in typical catalog & categories view) by the level of stock (in my case: 0 or 1 and I want those with '0' stock to be on the end of the list)?

You'd have to do this through a custom catalog created using the Views module.

I don't find the option in views for stock in Product Views.

Product: Cost
The cost of the product to the store.
Product: List position
The default sort criteria in the catalog.
Product: List price
The manufacturer's suggested price.
Product: SKU
The model number.
Product: Sell price
The price for which the product is sold.
Product: Weight
The physical weight.
