I've looked around a lot and haven't found a way to sort by Product Sku in the catalog grid.
Is there a way to do this?
If not, is there a way to replace the display of one catalog grid with a view ?

That's what I thought too, but, as I mentioned, I wasn't sure how to override the catalog listing...
A little playing around brought me to an answer:
I was able to do so by removing the alias for the "Category" taxonomy and making a view page with the appropriate URL Alias (catalog/48)
That worked!
