Agreed. It is awkward now... you can feasibly make an "Other" country yourself, or alternately you can use something like CpILL's attachment in this thread that adds all the countries of the world to your country table.

As a practical matter, how do you accept payment from every country? The payment gateways I've used have long but limited lists of the countries from which they'll accept transactions. I use CpILL's attachment edited to include only the countries my payment gateway accepts. Also be aware that even if the gateway will accept the payment, the terms of service may be different for some countries - you may not be covered against fraud for instance. So while you don't want to exclude customers just because they're not on the list of "approved" countries, this is a business decision that you should consider before going off and accepting payments from "Other".

There are also shipping considerations. Most countries put restrictions on the type of goods allowed to be shipped in, and some countries put restrictions on the type of goods that can be sent to other countries. Which is another reason for having the list of countries be "opt-in" instead of all-inclusive.

I am seeking to set up ubercart on http://www.kabissa.org for receiving payments for website hosting services we provide to organisations working in Africa. We'd like to accept payments by wire transfer, check drawn on US bank account, and paypal/credit card.

For this we need to have all countries in the world show up in checkout.
