The manufacturer module lets you list manufacturers in a taxonomy vocabulary and assign them to products. It also adds a few manufacturer specific pages and form settings to store information you might require for your products' manufacturers.

Advanced users may consider simply making their own manufacturer type with CCK and assigning them using a node reference field from the products for greater flexibility.

So can this be used to apply a change to all products? or do I have to edit each product individually.
Having to work with individual nodes would take hours for a whole catalog.

The biggest obstacle to doing that is there isn't an easy way to find all of the products that aren't in any categories. At least when you first install the module, you know that none of them are in any manufacturer categories.

I would use some SQL to insert rows into {term_node} to put all of your products into one manufacturer. Then, you can use the Move products page to sort them into the right manufacturers. That'll probably still take a while, but not nearly as much as changing each product by hand.

Is there a way to hook this into user roles so that only certain users have access to products from certain manufacturers? Or they're only able to create products from a specific manufacturer?

The first option is easy using some kind of Taxonomy access module. There are several to choose from at drupal.org, with varying degrees of complexity.

Preventing a user from using taxonomy terms is a much harder thing. Unless someone's already done it, it would require custom code to keep track of the permissions, control the options in the edit form, and all that jazz.
