Ubercart

How do you change or eliminate order statuses, the bane of urbercart.

Urbercart works in every way in terms of product creation, images, product settings et al but when I try to check out, the dreaded ORDER STAUS errors explode and I cannot checkout, thus making the app a paperweight. AFAIK, there is no way to change or eliminate the existing order status setting in the Orders part of UC. When I go to Order settings, I get this.

I see other people are getting this type message which tells me there is a bug or element lacking to allow people to deal with this. As long as this exists, my drupal environment is moot. I have sent many messages asking for help on this. I like the interface of UC and how the environment works but the end result and documentation is sketchy at best. I am not a coder, I am a designer who knows how to build things that work well who needs help on an issue I see other folks are dealing with and have not seen an adequate explanation of Order Status and how to rectify the problem.
